Monday, September 21, 2026 4 – 4:30 PM	*Mozzarella and Pasta Filata* Cheeses w/ Roscioli NYC** Brianna Giannizzero, head cheesemonger at Roscioli NYC, will demonstrate mozzarella stretching and explore the different types of pasta filata or stretched curd cheeses. Students will be invited to sample the fresh mozzarella and imported Italian samuli (cured meats). Open SBU Undergraduate Students only (capacity 20). Monday, September 21, 2026 6 – 7:30 PM	*The Tastes of Italy: Mozzarella and Pasta Filata* Cheeses** Learn to make mozzarella with Brianna Giannizzero, head cheesemonger at Roscioli NYC. Brianna will demonstrate the technique and explore pasta filata, or stretched curd cheeses, including mozzarella, provolone, and burrata. Participants will learn to shape and stretch cheese curds into fresh mozzarella, and will be treated to a flight of Italian cheeses, salumi (cured meats), and wine. All participants will receive a goody bag with cheese curds and a recipe card, so they can make a second cheese at home. Open to community members aged 21+ only. Tuesday, September 29, 2026 3:30 – 4:45 PM	Film Screening, Come un uomo sulla terra This film recounts the journey of Ethiopian-born filmmaker Dagmawi Yemer, who fled political repression in Ethiopia in 2005. Through the accounts of Ethiopian refugees living in Rome and the language of video documentary, the film provides direct insight into the brutal ways in which Libya, aided by Italian and European funding, controls the flow of African migrants trying to reach Europe. Come un uomo sulla terra is a journey of pain and dignity voiced through the remembrances of Dagmawi Yemer as he tells of unthinkable human suffering and denounces a desperate political situation. Profs. Loredana Polezzi and Simone Brioni will provide a brief introduction and response to the film. Run time: 60 minutes. Organized by The Center for Italian Studies and the D'Amato Chair. This programme is a tribute to Lorenzo Da Ponte (1749–1838), one of the greatest librettists in the history of opera and one of the most brilliant men of letters of the Enlightenment.
